I am very happy to share with you a wonderful Norwegian cake, called Kvæfjordkake – or Verdens Beste (World’s Best Cake) which is very interesting. This cake consists of two layers of soft vanilla sponge cake, topped with crispy meringue and toasted almonds with vanilla custard and smooth, creamy whipped cream. It is no surprise that this Norwegian cake was named Verdens Beste which means Best Cake in the World because with its amazing taste and texture, it is truly a delightful experience.

6 tablespoons (80g) butter, room temperature
1/3 cup (70g) sugar
3 egg yolks
3 tablespoons (45ml) milk
1 teaspoon (5g) vanilla extract
2/3 cup (80g) flour

For Meringue
3 egg whites
1/4 teaspoon (1g) salt
1 teaspoon (5ml) lemon juice
3/4 cup (150g) sugar
1/2 cup (40g) almond slices
Vanilla Pastry Cream
2 cups (480ml) milk
1/2 cup (100g) sugar
1/4 cup (30g) cornmeal
1 tablespoon (10g) flour
3 egg yolks
a little salt
2 teaspoons (10g) vanilla extract
1 1/4 cups (300g) whipped cream
1/2 tbsp (5g) gelatin powder
2 tablespoons (30ml) cold water
