Today we are going to make a beautiful red velvet roll cake. The enchanting red color is indeed a charming cake. I made this cake without red rice flour. However, for cocoa powder, people use natural cocoa without alkali treatment. Alkaline-treated Valrhona cocoa powder has a dark red color only. I use Hershey’s because I want a bright red color, and even a small amount of pigment can make it red.

10ml vanilla extract (2 teaspoons)
300g unsalted butter (1 cup + 1/3 cup + 1 teaspoon)
10ml milk liqueur (vosge) 2 teaspoons
Syrup
40g water (2 tbsp + 2 tbsp)
30 g sugar (2 tbsp + 1 tbsp)
3 ml of rum
How to make
