How to make Red Velvet Roll Cake – Special Vanilla Ermine Buttercream Frosting

Today we are going to make a beautiful red velvet roll cake. The enchanting red color is indeed a charming cake. I made this cake without red rice flour. However, for cocoa powder, people use natural cocoa without alkali treatment. Alkaline-treated Valrhona cocoa powder has a dark red color only. I use Hershey’s because I want a bright red color, and even a small amount of pigment can make it red.

237 ml = 1 cup
15ml = 1Tbsp
5ml = 1 teaspoon

● Double Berry Jelly
(Mold size: 38cm*29cm)
115g blueberry puree (1/2 cup)
85g raspberries puree (1/3 cup)
80g (1/3 cup) water
50g sugar (1/4 cup)
10g lemon juice (2 teaspoons)

15 g powdered gelatin (2 tablespoons)
75g water (1/4 cup + 1 tablespoon)

● Beautiful red velvet cake
(Mold size: 38cm*29cm)

30g milk chocolate (3 tablespoons)
40 g milk (2 tbsp + 2 tbsp)
25g Vegetable Oil (2 tbsp) – Grape Seed Oil, Canola Oil, Soybean Oil, Corn Oil O / Olive Oil X)

3 yolks
15 g sugar (1 tablespoon)

55g cake flour (1/3 cup + 2 teaspoons) – (can be replaced with 50g all-purpose flour + 7g cornstarch)
7g cocoa powder – (Hershey’s) (1 tbsp)
1 g baking powder (1/4 teaspoon)

3 egg whites
38g sugar (3 tablespoons)

Food coloring (red)

♥ Vanilla Ermine Buttercream Frosting
(Egg-free buttercream)

200g (1 cup) sugar
2g salt (1/2 teaspoon)
40g all-purpose flour (1/4 cup + 1 teaspoon)
330g milk (1 cup + 1/3 cup + 1 tablespoon)
10ml vanilla extract (2 teaspoons)
300g unsalted butter (1 cup + 1/3 cup + 1 teaspoon)
10ml milk liqueur (vosge) 2 teaspoons

Syrup
40g water (2 tbsp + 2 tbsp)
30 g sugar (2 tbsp + 1 tbsp)
3 ml of rum
How to make
1. Measure water and sugar
2. Melt the sugar in the microwave..
3. Add rum and mix, then cool to room temperature.
