How to Make Crispy Sliced Roasted Potatoes

Ingredient

4 pounds (1.8kg) yellow potatoes, peeled, thinly sliced

1 tablespoon (14g) butter, to grease the pan
1/4 cup (60g) olive oil
1/2 cup (50g) Parmesan cheese
3 tablespoons (24g) bread crumbs
1 teaspoon (3g) garlic powder
1 tablespoon fresh thyme or 1 teaspoon dried thyme
freshly ground salt and black pepper

3.5 oz (100g) bacon, cooked to crisp
fresh thyme

Instruct

Preheat oven to 375°F (190°C). Grease the bottom and sides of a 9-inch (23cm) cast iron skillet with butter. Set aside.
Use a mandoline, or a food processor, to cut the potatoes very thin.
Transfer the sliced potatoes to a large bowl.
Add olive oil, Parmesan cheese, thyme, garlic, breadcrumbs, salt, and pepper. Toss to coat evenly.
Arrange the potato slices in stacks and place them in the prepared pan, stacking lengthwise.
Bake uncovered for 60-70 minutes until the edges and top are crisp and golden brown and the center is tender.
Sprinkle with crisps of bacon and fresh thyme and serve! Enjoy!
