How to cook Chicken parm easy

Ingredient

MARINARA FEED
3 tbsp. extra virgin olive oil
1 small yellow onion, finely chopped
6 garlic cloves, finely chopped
1 (28-oz.) can tomato puree
2 large sprigs of basil
Kosher salt
Freshly ground pepper
CHICKEN
1 C. panko bread
1 teaspoon. garlic powder
2 C. Parmesan finely ground, divided
3/4 c. all-purpose flour
2 large eggs
6 (1/4″-thick) boneless, skinless chicken cutlets (approximately 1 1/2 lb.)
Kosher salt
Freshly ground pepper
1 C. shredded mozzarella cheese
1 C. vegetable oil or canola oil
chopped fresh basil, to serve

Instruct

Step 1
In a medium saucepan over medium heat, heat the oil. Add onion and garlic, stir well and reduce heat to low. Cover and cook, stirring occasionally, 10 minutes. Cover and cook, stirring occasionally, until onion is clear, soft, and fragrant, about 5 minutes more.
Step 2
Stir in tomatoes and basil. Bring to a boil, then reduce heat to medium-low and simmer, stirring occasionally, until thickened and flavors are blended, about 30 minutes; Season with salt and pepper. Discard the basil.
CHICKEN
Step 1
In a shallow bowl, combine panko, garlic powder, and 1 cup Parmesan. In another shallow bowl, pour flour. In a third shallow bowl, beat eggs with 1 tablespoon water.
Step 2
Dry the chicken; Season with salt and pepper. Dip in flour, shake off excess, then dip in egg, then panko mixture, pressing lightly to stick.
Step 3
In a small bowl, mix the mozzarella cheese and remaining 1 cup of Parmesan.
Step 4
Heat the broiler. In a large, heavy saucepan over medium heat, heat the oil until a deep fryer or instant-read thermometer reads 350°; if it smokes a little it’s ok. Place a wire rack in a baking sheet.
Step 5
Making one at a time, fry the chicken until golden brown on one side, about 1 minute. Flip and continue frying until the other side is golden brown and the chicken sounds a little louder—this is the steam evaporating from the chicken—about 1 minute more. Switch to prepared price. Repeat with the remaining chicken. Spoon some marinara over the chicken. Sprinkle with cheese mixture.
Step 6
Bake, watching carefully until cheese melts and brown spots form, about 2 minutes.
Step 7
Divide the chicken between the plates. Sprinkle basil on top. Serve with remaining marinara on the side.
