Properly cooked, zucchini opens up a bright, rich world of delicious flavors. This garden-fresh glory is capable of creating a plethora of flavors, playing a leading role in primavera pasta dishes, hearty casseroles and even moist chocolate cake.

Ingredient
2 medium squashes, cut into inch slices (they can also be quartered lengthwise, then halved horizontally for “fries”)
2 tablespoons melted butter
1 tablespoon minced fresh oregano, salt and pepper
Parmesan cheese for sprinkling
Step 1:
Prepare the pumpkin
In a medium-sized bowl, coat the zucchini in the melted butter. Add the oregano, salt and pepper and mix well.
Step 2:
Arrange and add cheese
On a greased baking sheet, lay out a round layer of zucchini. Next, sprinkle generous amounts of Parmesan cheese over the zukes—seriously, add as much as you like.

HOME FLAVOR
Preheat oven to 350°F and bake, uncovered, for 35-40 minutes. You’ll know the dish is done when the zucchini turns golden brown.
Try a kitchen tip: If you want to roast the zucchini, increase the oven temperature to 425°. This gives the zucchini a richer, darker brown color and retains some of the crunchy texture of the vegetable. However, keep an eye on the oven to make sure your vegetables don’t burn.
