10 oz (300g) about 1 medium zucchini, shredded
7 oz (200g) about 2 medium carrots, grated
1 teaspoon (5g) salt
1/4 cup (25g) Parmesan cheese, shredded
3 green onions, finely chopped
2 cloves of garlic, minced
3 tablespoons fresh parsley, chopped
3 tablespoons fresh dill, chopped
1/4 cup (30g) all-purpose flour
1/3 cup (50g) breadcrumbs
2 eggs
freshly ground black pepper, to taste
2 tablespoons olive oil, for frying
Instruct
Step 1
Combine zucchini, carrots, onion, cheddar cheese and flour in a bowl. Season with salt and pepper. Add milk and eggs. Mix.

Heat oil in large skillet over medium-high heat. Scoop 1/4 cup batter into pan. Spread out to form a flat ring. Repeat to make 3 more donuts.
