Ingredient:
Makes 6 servings
1 cup (240g) fresh cream
3/4 cup (180ml) milk
6 oz (180g) semisweet chocolate, small pieces
4 egg yolks
1 tablespoon (15g) sugar
1/4 teaspoon (1g) salt
1/2 teaspoon instant coffee powder, optional
1 teaspoon (5g) vanilla extract
Instruct
1. Preheat oven to 300F with rack in center of oven.
2. Put the chocolate in a heatproof bowl.
3. Bring the cream, milk, espresso powder and a pinch of salt (a three-finger pinch!) to a boil in a small heavy saucepan, stirring well until the powder dissolves.
4. Pour over chocolate; beat until chocolate is melted and mixture is smooth.
5. Whisk together yolks, sugar, and a pinch of salt in another bowl; Add warm chocolate mixture in a slow stream, beating well.
6. Pour the custard mixture through a fine sieve into a 1-qt glass measure; Cool completely, stirring occasionally, about 15 minutes.
7. Line the bottom of a baking pan with a folded kitchen towel (large enough to hold 8 4-5 oz ramekins) and arrange the ramekins on top of the towel.
8. Use a skewer to poke a few holes in a large piece of foil.
9. Divide the custard among the ramekins, then bake the custard in the hot water bath*, covered tightly with foil, until the custard is set around the edges but still slightly wobbly in the center, about 30-35 minutes.
10. Transfer ramekins to a cooling rack and set aside, uncovered, about 1 hour. Refrigerate, covered, until cold, at least 3 hours.
