Banana Oatmeal Pancakes – Easy and quick sugar-free healthy pancakes. These banana oatmeal pancakes are a fun, easy-to-make breakfast treat that’s free of refined sugar and full of flavor.
Ingredient
2 medium bananas
2 eggs
1 teaspoon (5g) vanilla extract
3 tablespoons (45g) butter, melted
1 cup (240ml) buttermilk
2 cups (200g) oatmeal
1/2 teaspoon (2g) ground cinnamon
2 teaspoons (8g) baking powder
1/2 teaspoon (3g) baking soda
1/2 teaspoon (3g) salt
Instruct
In a large bowl, mash the bananas with a fork.
Add eggs and vanilla extract and beat well.
Add melted butter and buttermilk and mix until well combined.
Add salt, cinnamon, baking powder, baking soda and oatmeal. Mix to combine. Let the dough stand for 5 minutes.
Heat a non-stick pan over medium heat and lightly grease with butter. Add up to ⅓ cup pancake batter.
Cook for about 2-3 minutes until air bubbles appear on top.
Flip and cook for 1-2 minutes until golden brown.
Serve with honey, maple syrup or peanut butter and fresh berries or toasted nuts.
