Cashew Chicken – Easy and quick recipe. This easy cashew chicken is a delicious Asian-inspired dish that’s quick and easy to prepare. This recipe combines tender chicken breasts and crunchy cashews cooked in a savory sauce that’s both sweet and tangy, made with soy sauce, garlic, hoisin sauce, and a touch of sugar. It’s a great stir-fry recipe that comes together for lunch or dinner in less than 30 minutes.
INGREDIENT
¾ cup roasted, unsalted cashews
¼ cup of water
2 teaspoons cornstarch
4 tablespoons of the best black sauce like Kikkoman or Lee Kum Kee
1 tablespoon soy sauce
1½ pounds boneless, skinless chicken breast or tenderloin, cut into 1-inch pieces
½ teaspoon salt
¼ teaspoon freshly ground black pepper
2 tablespoons vegetable oil
6 medium garlic cloves, minced
8 green onions (1 bunch), separate white and green parts, cut each part into 1 inch pieces
2 tablespoons rice vinegar
¼ teaspoon Asian sesame oil
INSTRUCT
Preheat oven to 350°F.
Place the cashews on the baking tray in a single layer. Toast the bread in the oven until fragrant, about 5 minutes. Set aside; They will crisp up as they cool.
Meanwhile, prepare the sauce: in a small bowl, mix together the water, cornstarch, hoisin and soy sauce. Set aside.
Place chicken pieces in a large bowl. Sprinkle with salt and pepper and mix well.
In a large nonstick skillet, heat 1 tablespoon vegetable oil over high heat until very hot. Add half the chicken to the pan and stir-fry until lightly browned but not cooked through, about 3 minutes. Transfer to plate.
Add remaining tablespoon vegetable oil to pan; Then add the remaining chicken, garlic and the white part of the green onion. Stir-fry until the chicken is light brown but not fully cooked, about 3 minutes. Add the first batch of chicken to the pan. Turn heat to medium and add rice vinegar; Cook until evaporated, about 30 seconds.
Add sauce mixture to chicken; Cook, stirring, until chicken is cooked through and sauce thickens, about 1 minute. Remove from heat. Stir in green onions, cashews and sesame oil. Serve immediately.
