2 pounds (900g) potatoes
4 tablespoons (60g) olive oil
1/2 teaspoon (2g) garlic powder
1 tablespoon (12g) bread crumbs
1/2 cup (50g) Parmesan cheese
1 teaspoon (3g) paprika
1/4 teaspoon (1g) paprika
1 teaspoon (5g) salt
freshly ground pepper
1 teaspoons dry herb mix (½ teaspoon oregano, ½ teaspoon basil, 1/2 teaspoon thyme)

yogurt dipping sauce
2/3 cup (160g) Greek yogurt or sour cream
1 teaspoon (5g) mustard
3 tablespoons (45g) sweet chili garlic fish sauce
Salt and pepper to taste

INSTRUCT

Preheat oven to 425 degrees F with the rack in the center of the oven. Line a large, lined baking sheet with parchment paper so the potatoes don’t stick.
Cut potatoes into 2-inch-long pieces (cut small potatoes in half, large potatoes in quarters, etc.). Place them on the prepared baking sheet.
Drizzle olive oil over the potatoes, then sprinkle with garlic powder, salt, and rosemary if using. Stir with your hands until the potatoes are evenly coated in the mixture (you may not have enough oil, but you do—go on!). Arrange the potatoes in an even layer on the pan with their flat edges pressed against the pan.
