Ingredient
Make 12 flatbreads
2 cups (320g) all-purpose flour
1 cup (380g) Greek yogurt
2 teaspoons (10g) baking powder
1 teaspoon (5g) salt
1/2 cup (50g) cheddar cheese, grated
To brush the tops
3 tablespoons (45g) butter
1 clove of garlic
1 tablespoon fresh parsley, chopped
1/4 teaspoon (1g) salt
Method
STEP 1
Combine flour, baking powder, yogurt, and oil with 1 teaspoon of salt and 2 tablespoons of water, mixing well into a coarse dough. Sprinkle flour over lightly sprinkled surface and knead for a few minutes until slightly smooth, then divide into 4 to 8 portions, depending on the size of bread you want.
STEP 2
Heat a heavy frying pan over high heat. To make a basic flatbread, roll the dough pieces on a lightly floured surface into coarse ovals, then fry each side for 1-2 minutes until golden and slightly charred. Alternatively, you can roll out the dough pieces, spread some butter or melted butter and sprinkle on top of cumin seeds, garlic, coriander or chili peppers if you like. Fold each piece of dough over, then roll it back into a rough oval and cook in the same way.
STEP 3
Brush the bread with some melted butter or ghee, then serve.
