These soft strawberry donuts are yeast doughnuts fried to perfection. They are filled with sweet roasted strawberries and whipped ricotta cream.

How to Make Strawberry Cream Donuts

Ingredient

Donut dough
– 300g Bread Flour (all-purpose flour can be used)
– 54g, 1 egg at room temperature
– 45g (4.5Tbsp) sugar
– 5g (1.5 teaspoons) salt
– 5g (0.8Tbsp) Instant Dry Yeast
– 140ml warm milk
– 40g room temperature unsalted butter

Whipped cream
– 300g heavy cream
– 30g sugar

Toppings
– Strawberry
– Strawberry syrup (optional)
– Sugar

INSTRUCT

This is the basic recipe for making soft, spongy donuts. This process is quite simple.

Making dough: I prefer to make dough with a stand mixer. You can make the dough by hand but using a mixer is much easier.
Let the dough rise: Transfer the dough to a clean bowl and cover with cling film and a clean kitchen towel. Let the dough double in size, .
Roasting strawberries: Roasting strawberries can be done at any time. I like to bake them while the donuts are baking. To bake the strawberries, preheat the oven and mix the peeled strawberries with the sugar, honey, and a pinch of salt. Bake until soft. Place in a bowl to cool.
Roll out the dough and cut into balls : Roll the dough out to 1/2 inch thick. Cut donuts with a 3-inch donut cutter. Line one or two baking trays with silicone or parchment paper or sprinkle flour on the baking sheet. Transfer the donuts to a baking tray, leaving space between the donuts. Lightly cover the doughnuts with a clean kitchen towel and leave in a draft-free/warm room temperature until slightly puffed up (about 30 minutes).
Prepare the oil: Heat the oil for about fifteen minutes before the donuts are ready to fry. Add about 3 inches of vegetable oil to a heavy saucepan and heat over medium heat until the oil reaches 350 F. Place donuts on a baking tray lined with paper towels.
Frying donuts: Frying two donuts at the same time. Fry for 1 minute on each side. Carefully remove from oil and place on paper towels. Repeat with remaining donuts.
Make the ricotta filling: Whip the ricotta in a food processor. Add vanilla and powdered sugar and mix well. Let the donuts cool before filling.
Donut Filling: Pour in strawberry juice and add berries to the whipped ricotta. Cut the donuts in half and pour the ricotta/berry mixture into each donut. Sprinkle with powdered sugar if desired.
