Cauliflower Gratin – Easy recipe for a healthy low carb side dish. This Cauliflower Gratin is a fun, comforting dish that’s perfect for any occasion. Fresh cauliflower florets are coated with a rich and flavorful cheese sauce.

How to Make Cauliflower Gratin

Ingredient

2 pounds (900g) cauliflower, about 1 large head
3 teaspoons breadcrumbs to cover the pan
Add sauce
2 tablespoons (30g) butter
2 tablespoons (20g) flour
1 bay leaf
2 cloves of garlic
1 ½ cups (360ml) milk
1/4 teaspoon (1g) nutmeg
1/2 teaspoon (3g) salt
1/4 teaspoon (1g) black pepper
1/4 cup (25g) Parmesan cheese
to assemble
1 green onion, finely chopped
1/2 cup (50g) Parmesan cheese, shredded
For bread toppings
1/3 cup (50g) breadcrumbs
1 tablespoon (15g) butter
1/4 teaspoon (1g) salt
1/4 teaspoon (1g) black pepper
1/4 teaspoon (1g) garlic powder

Instruct

Cut cauliflower into small florets.
Place the cauliflower florets in a steamer basket over boiling water. Cover and steam the cauliflower for 3 to 4 minutes, just enough to remove the raw material but still retain its firmness. It will continue to cook in the oven.
Remove cauliflower from heat and set aside.
Preheat oven to 400 F (200 C).
Prepare the sauce.
Put the milk, garlic and bay leaves in a pot and bring to a simmer. Turn off the stove and let it steep for about 5 minutes. Discard the bay leaves and garlic cloves.
Melt the butter in a small pan and stir in the flour. Cook for 1 minute then add milk. Stir it until it thickens. Season with nutmeg, salt and pepper and turn off the heat.
Add ¼ cup Parmesan cheese and stir well.
Butter a 9-10 inch (23-25cm) baking dish and cover with breadcrumbs.
Arrange the steamed cauliflower in a single layer and sprinkle the green onions on top of the cauliflower.
Pour sauce all over cauliflower.
Sprinkle Parmesan cheese on top.
Prepare the bread toppings.
In a small bowl mix breadcrumbs with salt, pepper, garlic powder and melted butter.
Sprinkle breadcrumbs on top of cheese.
Bake for 25-30 minutes until golden brown.
