Healthy Broccoli and Cheese Balls – easy to make, can be served with dipping sauces, or served in tortilla packs, as a side dish or as a great on-the-go snack. They can also be made as a healthy appetizer for parties and family gatherings.

Ingredient
1/2 cup (50g) Cheddar cheese
1/2 cup (50g) Parmesan cheese
1 head (300g) broccoli
2 green onions, chopped
2 cloves minced garlic
1/2 cup (60g) rolled oats
1/4 cup (30g) bread crumbs
2-3 eggs
Salt and freshly ground black pepper
vegetable oil
1. Preheat oven to 400F (200C). Line a baking sheet with parchment paper.
2. Grate the cheese using the small holes of the blender.
3. Cut broccoli into very small pieces and transfer to a large bowl. Place cheese, onion, garlic, oats, breadcrumbs, salt, and pepper in a bowl. Add 2 eggs and mix to combine. If still too dry, add another egg.
4. Use an ice cream spoon to take equal portions of broccoli and cheese mixture and shape into balls. Place the dough balls on the prepared baking tray and drizzle a little vegetable oil on top.
5. Bake for 25-30 minutes until lightly golden.
6. Serve with your favorite dipping sauce or as a side dish.
