Oreo Pie Crust
9 oz (250g) whole grain Oreo cookies
6 tablespoons (80g) butter, melted

Strawberry filling
7 oz (200g) fresh strawberries
1 1/2 tablespoons (7g) gelatin powder
3 tablespoons (45ml) cold water
1 1/4 cups (300g) whipped cream
2/3 cup (80g) powdered sugar
1 teaspoon (5g) vanilla extract
3.5 oz (100g) fresh strawberries, halved and sliced

Prepare the crust: Place the oreo cookies in the bowl of a food processor and blend until crumbs form. Add melted butter and pour over the crushed biscuits. Treat until evenly moist. Press the cookie mixture with the back of a spoon and your fingers as needed, onto the bottom and sides of an 8-9 inch (20-23 cm) round cake pan. Refrigerate until you are ready to make the filling.
Prepare the strawberry filling. Puree the strawberries in a blender. Set aside.
Dissolve the gelatin in cold water and let it sit for about 5 to 10 minutes for the gelatin to swell. Place the gelatin over low heat just until the gelatin dissolves and pour it over the strawberry puree and mix to combine.
Beat cream in a large bowl until thickened. Add vanilla and powdered sugar and continue beating until stiff peaks.
Gently fold in the gelatin mixture and strawberry puree and combine with the sliced ​​strawberries.
Pour the strawberry filling on top of the pie crust and smooth the top.
Refrigerate for a few hours or overnight.
