How to Make Coconut Fudge

Ingredient

For caramelized coconut
1/3 cup (70g) sugar
2 tbsp (30ml) water
1 ⅓ cup (100g) unsweetened shredded coconut

For Fudge

4 cups (500g) powdered milk
1/2 tsp (3g) salt
1 ¼ cups (250g) sugar
1 cup (240ml) water
1 cup (230g) unsalted butter
1 tsp (5g) vanilla extract
1 ⅓ cup (100g) unsweetened shredded coconut

Instruct

Prepare caramelized coconut.
Place the sugar and water in a medium heavy-bottomed saucepan over medium-high heat and cook without stirring until the sugar dissolves and caramelizes.
Add shredded coconut and stir continuously for about 1 minute until it turns golden brown.
Turn off the heat, transfer to a bowl and let cool.
Prepare fondant.
Butter an 8-9 inch (20-23cm) square pan and set aside.
In a medium bowl, mix milk powder with salt.
In a medium saucepan, boil water and sugar. Let simmer for 10 minutes then add butter. Stir until the butter melts then turn off the heat. Add vanilla extract and stir well to combine.
Pour the syrup over the powdered milk mixture and mix until combined.
Reserve ⅔ cup (50g) of caramelized coconut for topping.
Add the caramelized coconut and remaining shredded coconut.
Pour mixture into prepared pan.
Sprinkle the remaining caramelized coconut on top.
Let cool completely at room temperature.
Cut into pieces and serve.
