3.5 oz (100g) half a week chocolate
3.5 oz (100g) milk chocolate
2/3 cup (160g) whipped cream
1 teaspoon (3g) gelatin powder
1 tablespoon (15ml) cold water
1 cup (240g) whipping cream (35% fat), chilled
1/4 cup (35g) chocolate crispy pearls, optional

7 oz (200g) cream cheese
2/3 cup (160g) sparkling white wine
1/3 cup (80g) powdered sugar
2 1/2 teaspoons (8g) gelatin powder
3 tablespoons (45g) cold water
1 cup (240g) whipping cream (35% fat), chilled
