This easy-to-make Lemon Ricotta Cake is a delightful dessert that effortlessly combines the tangy flavor of lemon with the creamy richness of ricotta cheese. Ingredient
Makes 10 servings
4 medium eggs, separated
1/2 cup (100g) sugar, to mix with the yolks
Peel of two lemons
1 teaspoon (5g) vanilla extract
3 tablespoons (45ml) of lemon juice
2 cups (480g) Ricotta cheese
1 cup (125g) all-purpose flour
1/4 teaspoon (1g) salt
1/3 cup (70g) sugar, for whipping egg whites
To decorate
powdered sugar
lemon slices
fresh strawberries
Instruct
Preheat oven to 180°C / 360°F. Grease a spring or cake pan with butter or oil, or line with baking paper.
Place softened butter and sugar in a large bowl or stand mixer. Mix for 2-3 minutes until light and creamy. Add ricotta cheese and continue mixing on medium-high for 5 minutes.
In a small saucepan, whisk together the eggs, vanilla essence, and lemon zest. Pour in ricotta mixture and combine on medium low. Note: At this stage, the dough will appear to solidify – don’t worry! That’s normal for this dough and your cake will be perfect once cooked.
Fold the dough into the ricotta mixture.4.
Spread the ricotta dough out into a springform.5.
Add the self-raising flour and slowly mix through the mixture with a wooden spoon. Note: Do not over-mix this step, continue until just combined.
Pour the batter into the prepared pan and smooth the surface with the back of a spatula. Transfer to the bottom or center rack in the oven and bake for about 40-50 minutes or until a skewer poked in the center comes out clean. Note: Watch for the top as it starts to brown, this is usually a sign it’s almost ready.
Remove from oven and let cool in pan for 15 minutes. Remove from pan, slice and serve. Optional: Dust with frozen sugar.
