9 oz (250g) Fettuccine noodles

1 tablespoon (14g) olive oil
1 pound (450g) chicken breast, skinless, boneless
garlic powder
salt
freshly ground pepper

2 tablespoons (30g) butter
1 clove of garlic, minced
1 cup (240g) cooking cream
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 cup (50g) Parmesan cheese, finely grated
Salt and pepper to taste

Instruct
Bring a large pot of salted water to a boil. Add the pasta or noodles of your choice then cook until cooked through (usually 9-12 minutes). Reserve half a cup of pasta water and drain.
Place boneless, skinless chicken breasts on a cutting board and carefully cut the chicken breasts in half horizontally to form two thin cutlets.
Drizzle olive oil over each piece of chicken, then season both sides with 2 teaspoons of Italian seasoning, garlic powder, and salt and pepper.
Heat a large skillet or skillet over medium to high heat, then add the chicken and fry for 2-3 minutes on each side until golden and evenly browned. Remove from pan and set aside.
Melt butter in the same pan until bubbly. Add garlic and cook until fragrant (30 seconds – 1 minute).
Pour in cream and herbs/spices then simmer. Cook for 2-3 minutes until cream is slightly reduced.
Stir in Parmesan cheese and let melt/cook for another 2-3 minutes until sauce coats the back of spoon.
Season with salt and pepper to taste, then combine with sliced chicken, cooked pasta, and a few tablespoons of pasta cooking water.
Serve with fresh parsley and Parmesan.
